Steak Salad Pladina

Enjoy a salad that is exploding with flavor!



Kristin Andrus shares a recipe that will make a salad pop with flavor.
Piadina Dough
2 packages store bought whole grain or plain pizza dough (Whole Foods has the best)
Extra Virgin Olive Oil (EVOO)
6 Tb Pesto

Bring the dough to room temperature. Using a pizza cutter or knife divide each dough ball into 3-4 portions depending on how big you want your Piadina crust. Cover dough balls in flour and stretch out to desired size. You may want to stretch it out, let it rest, then stretch it out again. Brush both sides with EVOO. If using a BBQ, grill on high until first side has firmed up (3-4 minutes). Flip over and cook for 1-2 more minutes until dough is cooked through. If baking pizza dough, preheat oven to 400 and cook for 9-10 minutes not needing to flip sides. Once cooked, brush each crust with 1 Tb of pesto. Set aside.
Maison Arugula Salad
1 bag of arugula
1/2 C shelled pistachios
1/2 C shaved Parmesan
1 C grilled asparagus, sliced
1 avocado, diced and sprinkled with lemon juice and S&P
Fried or poached egg (optional)
Maison dressing

Combine first 5 ingredients in medium bowl with Maison dressing. Top Piadina crust with salad and egg.
Maison Dressing
Juice of 1-2 lemons
3/4 C EVOO
2-3 garlic cloves, minced
S&P to taste

Combine all ingredients, mix well and chill.
Grilled Steak Salad
Romaine and Red Leaf lettuce
Grilled asparagus, sliced
Grilled green onion, diced
Frozen Roasted corn (Trader Joes)
Grape tomatoes
Feta cheese
Avocado, diced
New York Strip, grilled
Red Wine Vinaigrette

To grill steak, set out at room temperature and coat with EVOO and seasoned salt and pepper. Grill on high until medium rare (it will continue cooking once pulled off the grill). Let the steak sit for 10 minutes and then thinly slice. Combine all ingredients and dress with Red Wine Vinaigrette. Top Piadina crust with salad and enjoy!
Red Wine Vinaigrette
1 C Canola oil
1/2 C Red Wine Vinegar
1/6 C Sugar
1/3 C finely chopped purple onion

Combine all ingredients, mix well and chill.
