4 cups sliced fresh rhubarb
4 cups sliced strawberries
1/2-1 cup sugar (part brown adds nice flavor)
1 lemon cake mix
1/4 cup melted butter
1 1/4 cups milk
vanilla ice cream
Spray 9×13 baking pan with non-stick spray. Arrange sliced rhubarb and strawberries in bottom of pan.
Sprinkle with sugar.
Combine cake mix, eggs, melted butter, and milk. Beat 2 minutes. Spread cake batter over fruit. Bake at 350
degrees for 40-45 minutes or until golden brown.
Serve warm or cold with a scoop of vanilla ice cream. Garnish with mint leaves and a fr
