Swedish Apple-Almond Kuchen

Swedish Apple-Almond Kuchen

Crust Ingredients
1 1/2 cups flour
1/3 cup sugar
3/4 teaspoon baking powder
7 tablespoons butter, cut into small pieces
1/2 teaspoon vanilla
1 egg

Filling Ingredients
1/2 cup almonds
1/2 cup sugar
3 tablespoons flour
1 egg
2 tablespoons butter
1/2 teaspoon vanilla
3 medium apples

1. Heat oven to 350 degrees F.

2. In the bowl of a food processor, process flour, sugar, and baking powder. Add butter, pulsing 3 to 4 times until the mixture resembles coarse crumbs. Add vanilla and egg, pulsing until a soft dough forms.

3. Pat dough evenly into a springform pan, covering the bottom and 1 1/2 inches up the sides. Keep in the fridge until the filling is ready.

4. For the filling, blend the almonds, sugar and flour in the bowl of a food processor until the almonds are ground fine. Add the egg, butter and vanilla, pulsing until blended.

5. Peel, quarter and core the apples. Slice each quarter lengthwise into thin slices, being careful not to cut through the apple.

6. Spread filling over chilled crust. Arrange apple quarters over the filling side by side, like petals, with one quarter in the middle.

7. Bake for 60 to 65 minutes, until the crust is golden. Cool on wire rack. Loosen edges and cool completely. Cover with plastic wrap and refrigerate. Sprinkle with powdered sugar before serving.
