Sweet Dough Bunnies


1 tablespoon active dry yeast
1/4 cup lukewarm water
1/2 cup milk, scalded
1/2 cup margarine
1/2 cup granulated sugar
1 teaspoon salt
2 eggs, slightly beaten
1-2 tablespoons grated orange zest
1/4 cup orange juice
4-4 1/2 cups all-purpose flour


Place yeast in the warm water. Set aside. Scald milk and add margarine, sugar, and salt. Stir until margarine is melted and mixture is lukewarm. Add yeast mixture, eggs, orange zest, and orange juice to the milk mixture. Stir in enough flour to make a soft dough. Knead dough on a lightly floured surface until smooth and elastic. Place in a greased bowl and cover. Let rise until double. Punch down dough and use to make Sweet Dough Bunnies.

To make each bunny:

Roll a piece of dough into a 14-inch x 1/2-inch rope. Cross ends of rope to make a circle at the bottom. Bring the underneath piece up over the top leaving ends spread open to make “ears.” Pinch ends of dough to make pointed “ears.” Roll a small 1-inch ball of dough and place in center of the circle to form a “tail.” (It will look as if you are looking at the back of a rabbit.) Place on a greased cookie sheet and let rise until doubled. Bake at 375 degrees for 10-12 minutes. Bunnies can be frosted with an orange powdered sugar glaze while warm if desired. Yield 18-20 bunnies.

Orange Glaze:

Mix together 2 cups powdered sugar, 1 tablespoon softened margarine and enough orange juice to make a thin consistency. Brush on bunny rolls when warm.
