This salad is getting the star treatment – topped with toasted walnuts, tender steak strips, and bursting with a blueberry dressing! It’s the best thing to add to your summer salad repertoire.
Elliott Sulkis shared his recipe for steak salad with a blueberry vinaigrette dressing. The pretty dressing adds a pop of color to your bed of greens, and, it’s therapeutic to make! Smash your blueberries, add them to a mason jar with the other ingredients, and pulse them with an immersion blender.
Steak Salad with Blueberry Vinaigrette Dressing

Blueberry Vinaigrette Ingredients
- 1/3 cup champagne vinegar
- 3 tbsp raw honey
- 1 tbsp fresh lemon juice
- 1/2 cup Extra Virgin Olive Oil
- 1 cup Blueberries, mashed
- Salt pepper
METHOD
1. Add a cup of blueberries into a zip lock bag and smush them up. Elliott used a meat tenderizer, but a rolling pin would also work.
2. Add all ingredients in a mason jar.
3. Use an immersion blender to combine everything together. The color should be pink/purple.
4. Put it in the fridge for at least an hour. The longer it sits before using the better.

- 1/2 spring 1/2 spinach mix
- Blueberry vinaigrette
- Sliced NY Strip, cooked to your liking
- Crumbled goat cheese
- Toasted walnuts
- More blueberry vinaigrette
