Tapas: Blue Cheese Cake

Tapas are a variety of appetizers or snacks, shared by friends; and because they are often strong flavored or salty, they are intended to the stimulate appetite and thirst. Blue Cheese Cake makes a great Tapa.

1 cup Japanese-style bread crumbs (Panko)
1/2 cup chopped walnuts
1/4 cup butter, melted
1 pound blue cheese, room temperature
8 ounces cream cheese, softened
4 eggs
1/4 cup milk
6-10 drops hot pepper sauce, or to taste

Preheat oven to 325 degrees. Spray 10-inch springform pan with non-stick spray. Line the bottom of pan with parchment paper, set aside.

Combine bread crumbs, walnuts and butter, mix well; press into bottom or prepared pan.

Beat together blue cheese and cream cheese; add eggs and beat until smooth and creamy; add milk and hot sauce, beat until smooth. Pour filling on top crumbs in prepared pan. Bake 45-60 minutes or until center is set. Cool; refrigerate cheesecake in the pan overnight. Unmold and cut into 16 wedges. Serve with grapes, crackers and salad as a Tapa appetizer or luncheon dish.

This recipe is a slight adaptation of “Spicy Blue Cheesecake” created by Chef Dabl for the American Dairy Association, 1994. Nutrition analysis does not include grapes, crackers or other pairings. As will all food, enjoy Tapas in moderation. Recipe serves 16.
