Tart Lemon Cream Cheese Turnovers

Chocolate is the name of the game during the month of February. But we are breaking out of that mold with some sweet and tangy lemon turnovers! Lemon is so light and refreshing, but the great part about this recipe? You can fill it with whatever fruit flavor you want.

Tart Lemon Cream Cheese Turnovers

Ingredients

  • 2 sheets puff pastry, thawed
  • 1 cup whipped cream cheese
  • 1 cup purchased lemon curd
  • 1/4 cup powdered sugar
  • 1 egg + 1 tbsp water
  • Crystal sugar, optional
  • Vanilla icing, optional

Directions

Preheat oven to 400 degrees.

Line 2 baking sheets with parchment.

In a mixing bowl, with a fork or whisk, mix cream cheese and sugar together. Whisk in lemon curd and set aside.

On a lightly floured surface, roll one sheet of puff pastry into large rectangle.

Cut into 6 even squares.

Lightly brush edges of squares with the egg wash.

Place a large spoon full of lemon mixture into the the center of each square.

Fold edges together to form a triangle, and place on prepared sheet.

Brush turnovers with egg wash and press the edges of turnover with a fork to completely seal. Repeat.

Sprinkle with crystal sugar and bake for 10-14 minutes or until golden brown.

Cool slightly, and drizzle with icing if desired.

Makes 1 dozen.

 

Vanilla Icing

Ingredients

  • 1/2 cup confectioners
  • 1 tbsp butter, melted
  • 1 tbsp milk
  • 1/2 tsp vanilla

Directions

In a small bowl, whisk sugar, butter, milk, and vanilla until smooth. Glaze while slightly warm.
