Teriyaki Salmon with Garlic Vegetables


2 – 6 ounce salmon filets
salt and pepper to taste
½ cup soy sauce
2 tablespoons brown sugar
2 tablespoons crushed pineapple
2 ½ teaspoons ginger, crushed
2 teaspoon garlic, crushed
½ cup snap peas
½ cup match stick carrots
½ cup broccoli
2 ounces olive oil


In a small saucepan over low heat, combine the soy sauce, brown sugar, pineapple, ginger and ½ teaspoon of the garlic. Let simmer for 5 to 7 minutes and remove from heat.

In a heavy sauté pan over medium high heat, add one ounce of the olive oil and bring to temperature. Season salmon with salt and pepper, place in sauté pan and cook for 3 minutes per side. Remove salmon and set aside.

Using the same sauté pan, wipe out pan with a paper towel and again bring to medium high heat.

Place remaining olive oil in the pan and add the ginger and garlic. Cook for 30 seconds. Add the vegetables and cook until hot. Place vegetables on a plate and top with the salmon. Spoon sauce over salmon and serve.
