The Art of the Christmas Bar Box

There’s an art to the cookie plate. And we think this array of homebaked cookie bars delivers.



Nettie Frank agreed to share not just family recipes, but the concept of the Christmas Bar Box!
Lemon Bars Crust
2 1/2 cups flour
1 1/4 cups butter, soft
1/2 cup powdered sugar


Combine all ingredients until cookie dough consistency. You can use your mixer with the paddle attachment or a food processor.



Spray cookie sheet with cooking spray. Press dough down into cookie sheet.



Bake at 350 for 10 min. Then add filling.
Lemon Bars Filling
6 lemons zested
5 cups sugar
1 1/4 cup lemon juice
10 eggs
1/2 cup + 2 T. flour
1 1/4 tsp. Salt
2 1/2 tsp. Baking powder

In a large bowl zest the lemons into the sugar. Rub sugar and zest together until sugar is yellow.



In a separate bowl combine eggs and juice. Whisk together for 2 min, or until the eggs are beaten.



Add the flour, salt and Baking powder to sugar mixture. Use a whisk to combine those.



Add egg mixture to sugar mixture. Whisk really well, make sure to get all sugar mixed in.



Pour filling into pre baked crust.



Bake at 350 for 30-35 min.



To make sure they are cooked all the way, jiggle pan a little in the oven, if it moves back and forth it’s not done. You want it to move like jello would in a pan, that’s when it’s done. If you don’t cook it to this consistency it will be messy when you cut.
Naughty Bars Crust
2 cups crushed graham crackers
1/2 cup sugar
2 sticks of butter – melted

Combine all together until it forms a ball in hand. Spray a cookie sheet, press crust into the bottom.

Naughty Bars Filling
3 cups semi sweet chocolate chips
1 – 16 oz bad of shredded coconut
3 cans Sweetened condensed milk


Layer chocolate chips, spread out over crust.



Spread coconut all around and Press firmly into the chocolate.



Pour condensed milk all over, covering all coconut.



Bake at 350 for 30 min.
Brownies
3 sticks butter, sliced
8 oz. unsweetened chocolate
Melt together, double boiler. Set aside.
5 eggs
1/4 tsp. Salt
3 1/3 cups Sugar
2 tsp. Vanilla
2 cups Flour

Whisk together over a double boiler. Keep over heat and whisking for 4 min. Using whisk attachment whisk mixture on high for 5 min.



Add melted chocolate to egg mixture



Add and mix Vanilla and Flour until combined.



Spray 9×11 in. Pan. Pour batter into pan.



Bake at 350 for 35 min.
Blondies
1 1/3 sticks butter, soft
3/4 cup Brown sugar
1 tsp Vanilla
2 eggs
2 cups flour
1 tsp. Baking powder
1/2 tsp salt
1 cup white chocolate chips
1/2 cup milk chocolate chips

Cream together butter and brown suger together with paddle attachment.



Add Vanilla and Eggs to butter mixture. Mix until eggs are fully mixed in.



Add flour, baking powder, salt, and all chocolate chips and mix until cookie dough consistency.



Bake at 310 for 30 minutes.
