Chocolate Waffle Cookies
1 1/2 cups all-purpose flour
3 tablespoons sugar
1 1/2 cups cocoa powder
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon baking soda
3 whole eggs, beaten
1/4 cup unsalted butter, melted and slightly cooled
1 teaspoon pure vanilla extract
2 cups buttermilk
3/4 cup chocolate chips
Mix together flour, sugar, cocoa, baking powder, salt, baking soda. Set aside. Beat eggs slowly add butter. Add vanilla. Mix in buttermilk. Combine wet and dry ingredients. Softly stir in chocolate chips.
Scoop about 2 tablespoons of batter into the center of each quarter of your waffle iron. Cook until waffle is crispy on both sides.
Heirloom Sugar Cookies
1 cup butter
2 cups sugar
3 eggs
1 tsp vanilla
1/4 cup cream
5 cups flour
5 teaspoons baking powder
½ teaspoon nutmeg
1/4 teaspoon salt
Cream butter and sugar. Add eggs and vanilla. Sift dry ingredients. Add alternating with cream. Beginning and ending with dry. Wrap in 1 lb squares and freeze until needed.
When ready to bake, roll ¼” thick and cut in desired shape. Bake at 350 for 8-10 min.
Pine Cone Cake
4 cups sugar
1.5 c butter
9 eggs
1 ½ Tablespoons vanilla
4 1/4 cups flour
1 ¾ cup cocoa powder
1 ¼ table spoons baking soda
1 ½ teaspoons salt
4 ½ cups buttermilk
Cream butter and sugar. Add eggs and vanilla. Sift dry ingredients. Add to wet alternating with buttermilk. Beginning and ending with dry.
Spray pans, pour evenly into 3 jelly roll pans, bake
at 350 for 15-20 min. or until toothpick comes out clean.
Eggnog Cake
Cake
1 1/2 cups sugar
1 c butter
3 eggs separated
3 cups flour
3/4 tablespoons baking powder
2 teaspoons nutmeg
1 cup eggnog
Glaze
½ cup sugar
½ cup butter
¼ cup water
¾ tsp nutmeg
¾ cup dark rum
¾ cup brandy
Cream butter and sugar. Add egg yolks. Sift dry ingredients. Add to wet alternating with eggnog. Beginning and ending with dry.
Take egg whites and beat until stiff. Fold into batter.
Spray pans, Pour evenly into 1 jelly roll pans, bake at 325 for 15-20 min. or until toothpick comes out clean.
Combine all ingredients for glaze into a sauce pan on medium heat. Let it come to a boil, stirring occasionally. Reduce on medium heat for 5 minutes. Use a pastry brush to brush over warm
cake.
