Three Bacon Sandwiches

BBLTT: Bacon, Bleu Cheese, Lettuce, Smoked Turkey and Tomato Sandwiches
8 slices Sourdough bread, toasted
10-12 strips peppered bacon, cooked
Bleu cheese, crumbled
Smoked turkey breast thinly sliced
Sliced Tomatoes
Leaf lettuce
Mayonnaise


Spread toasted bread with mayonnaise, top with bleu cheese, smoked turkey, bacon, tomatoes, and lettuce. Serve immediately.

Makes 4 servings

Southwest BLT Sandwiches with Mango Habanero Mayo
8 slices Cheese bread, toasted
10-12 pieces thick sliced bacon, cooked
Peppered chicken breast, thinly sliced
1-2 sliced avocados
Sliced Tomatoes
Leaf lettuce
Mango Habanero Mayonnaise (recipe follows )


Spread toasted bread with Mayonnaise, top with sliced chicken, bacon, avocado slices, sliced tomatoes, and lettuce. Serve immediately.

Serves 4

Mango Habanero Mayonnaise
1/3 cup prepared mayonnaise
2 tbsp Cookwell & Company Mango, Green Apple and Habanero Sweet Hot Sauce


In a small bowl, whisk mayonnaise with mango sauce. Chill until ready to use.

Bacon, Spinach, Apple, and Cheddar Sandwiches with Sweet Lemon Dressing
4 pieces Ciabatta bread, sliced in half, and toasted
8-10 strips apple wood smoked bacon, cooked
1 large Pink Lady, Granny Smith or Gala apple, thinly sliced
Sliced Vermont cheddar cheese
2-3 cups spinach leaves
Sweet Lemon Dressing (recipe follows)


Generously spread toasted bread with dressing; top with spinach leaves, apples, cheddar cheese, and bacon. Serve immediately.

Makes 4 servings

Sweet Lemon Dressing
1/2 cup vanilla yogurt
2 tbsp prepared mayonnaise
Zest from 1 lemon
Juices from 1/2 a lemon


In a small bowl, whisk all ingredients together. Chill until ready to use.
