Today’s Recipe: Bread Bunnies

You might have seen them on Pinterest, the adorable little bunnies or
bears made out of bread. But finding out how to make them is a tricky
matter.
Studio 5 Contributor Amy Richardson tracked down the technique and
shares her recipe for making the bread bunnies and bears, along with
orange honey butter.
Karen’s Famous Roll recipe:
1/2 cup + 1 cup very warm water
1 tbsp yeast
2 eggs
1/2 cup sugar
1/3 cup butter, melted
1 tsp salt
5 cups flour

In a large mixing bowl, soften yeast in 1/2 cup water.
Add additional water and eggs. Beat with an electric mixer on high; until frothy.
Add sugar, butter, and salt. Repeat.
With dough attachment, stir in about 2 1/2 cups flour until it forms a smooth elastic
dough. Add the rest of the flour.
Mix until dough pulls away from the sides, and forms a ball.
Grease bowl, turn dough to coat. Cover and let rise until doubled in size.

On a lightly floured board, divide dough in half. Using one half at a time, form a 11×7
rectangle.

Cut dough into about 2inch squares. Lightly grease shaking sheets.

Lemon Filled Bunny Cookies:
2 1/3 cups flour
1/4 tsp salt
1 cup butter
1 large egg
1 tsp vanilla extract
1/3 cup prepared lemon curd


Heat oven to 375

With and electric mixer, cream the butter and sugar until light and fluffy. About 2-3
minutes.

Add egg and vanilla. Beat until smooth. Add salt and flour and mix until well blended.

On a lightly floured board, roll out dough to 1/8 inch. Cut into 1 inch circles leaving some
dough for ears remaining. Gently place 1/2 of the circles on a parchment lined baking
sheet, while forming into an egg shape. Top center of dough with about 1/2 tsp lemon
curd. Cover with another round of dough, sealing the edges to the bottom. Cut small
triangle to form ears. Place just past half way on the dough, smoothing ends to finish. With
a toothpick, make lines in ears. With flat side of toothpick, press down gently behind ears
in a vertical line to define ears.
Poke holes for eyes. Repeat.

Bake for 8- 10 minutes or until lightly browned.

Makes about 36 cookies

To form rabbits:


Form each dough square into strawberry or egg shape. Place on cookie sheet and repeat.
Cover and let rise until double in size. With scissors, cut at a 45 degree angle towards the
narrow end of the dough to form ear, repeat on the other side. With a tooth pick, make
slight indent to form groove in the ears. Lay ears down. Poke dough with a toothpick to
make eyes.

Bake at 400 degrees for 12-15 minutes, or until lightly brown.

To form bears:


Form each dough square in to a round, reserving some dough to form ears. Make two small
rounds to form ears. Place on top of round to form ears. Place on cookie sheet, and repeat.
Cover and let rise until double in size.

Bake at 400 defers for 12-15 minutes, or until lightly brown.
With a black food color marker, make eyes and nose.

Fresh Orange Honey Butter
1/2 cup butter, at room temperature
3 tbsp powdered sugar
1 tbsp honey
1/4 tsp vanilla
Zest from 1 orange


Using an electric mixer, beat butter until smooth. Add honey and powdered sugar. Beat
until light and fluffy. Add orange zest and vanilla. Mix well.

Makes about 1/2 cup
