Today’s Recipes: Gourmet Grilled Cheese

Grilled Cheese sandwiches are going to take the world by storm this
year. The new version of grilled cheese pairs it with various cheeses
and other non-traditional ingredients.

Studio 5 Contributor Amy Richardson shares two different twists on
the new grilled cheese.
Strawberry Pecan White Chocolate Grilled Cream Cheese Sandwiches
8 slices White Chocolate Pecan Bread or rustic bread
1/3 cup Belgian White Chocolate Spread
1/4 cup cream cheese
1/4 cup strawberry freezer preserves
2 tbsp butter

Butter one side of sliced bread. Turn bread over.
Spread cream cheese evenly on four of the slices.
Spread Belgian Chocolate Spread on the other four slices.
Top chocolate evenly with strawberry preserves.
Cover with cream cheese covered sliced bread.
Grill over medium heat until lightly browned.
Repeat on the other side.
Serve immediately.

Makes 4 servings

Smoked Gouda, Bacon, and Shaved Apple Grilled Cheese Sandwich with a Sweet Honey Mustard Dipping Sauce

8 slices rustic Italian bread
2 tbsp butter
8 slices Applewood smoked bacon, cooked
3 oz smoked Gouda cheese, coarsely grated
9 oz Smoked mozzarella cheese, coarsely grated
1-2 apples, shaved, Fuji, Honeycrisp, or Pink Lady

Dipping sauce:

1/4 cup mayonnaise
2 tbsp Dijon mustard
2 tbsp honey
1 tbsp apple cider
1 tsp fresh lemon juice

To make the sauce:

Place all ingredients into a small mixing bowl. Whisk until smooth.
Refrigerate until ready to use.

To assemble sandwich:

Butter 8 slices of bread. With butter side down, evenly sprinkle 1/2 of the grated cheese
onto four slices of bread.
Lay 2 slices of bacon on each cheese covered slice. Top evenly with shaved apple.
Top with remaining cheese. Cover with additional bread, butter side up.
Grill on medium heat until browned.
Turn and repeat until golden brown and cheese has melted.

Serve immediately with dipping sauce.
