Triple Berry Zumo with Lemon Sorbetto and Crystalized Mint French Cheese and Cracker Assortment

Berry Zumo:
6 oz fresh Raspberries, rinsed
6 oz fresh Blackberries, rinsed, and cut in half if necessary
1/2 pound fresh Strawberries, rinsed and diced
3-4 tbsp super fine sugar
Juice from 1 lime
1/2 cup passion fruit juice
1/2 cup pineapple juice
Club Soda
Store bought Lemon Sorbetto

In a medium sized mixing bowl, toss together raspberries, blackberries, strawberries, sugar and lime juice. Pour in passionfruit and pineapple juices. Mix well.

Refrigerate to chill. Divide zumo evenly into glasses. Serve with a splash of club soda and a small scoop of lemon sorbetto and garnish with crystalized mint.
Crystalized Mint:
Fresh mint leaves
Egg white, lightly beaten
Super fine sugar

On clean and dry mint leaves, lightly brush edges with egg white, dip edges in sugar and refrigerate until ready to use.

Rosemary Sea Salt Croccantini Crackers
Camembert French Cheese
Cambazola Champignon
Four Pepper Montcherve

Serve with Triple Berry Zumo
