Turkey Meat Loaf

Turkey Meat Loaf
2 lbs. ground turkey, (half white and half dark meat)
¾ cup milk
¾ cup soft bread crumbs (or one leftover hamburger bun)
2 teaspoons salt
1/8 teaspoon pepper
2 teaspoons fresh thyme (or 1 teaspoon dried)
1 medium carrot, grated
1 medium onion, diced
2 eggs beaten

Topping:
¼ cup catsup
¼ cup cranberry sauce
2 tablespoons prepared mustard


Pour milk over bread crumbs. Add turkey, salt, pepper, thyme, carrot, onion, and eggs. Mix thoroughly. Form in a loaf pan. Mix together catsup, cranberry sauce, and mustard and pour over meat loaf. Bake at 300 for 1½ hours, or until meat is no longer pink inside.

*Note: Families love the sauce! You may want to double it.

*Great jobs for kids: Grate the carrots. Use a vegetable peeler and peel carrot slices. Lay them in the center of the meatloaf, then put the other half of meat on top. Dice the onion if you are allowed to use a knife. Mix it all together with latex gloves. Pour the topping over the loaf. Make the bread crumbs if you are allowed to use a blender.
