Tuscan Chicken Salad

1 whole chicken (roasted, meat picked from the bone
2 apples (cored & medium chopped)
1 red onion (chopped small)
6 stalks celery (chopped small)
1 yellow bell pepper (chopped medium)
½ lb. grapes (rinsed and stemmed)
½ cup pine nuts (toasted)
1 T fresh oregano (chopped fine)
½ T fresh rosemary (chopped fine)
1½ cups mayonnaise
4 T prepared mustard
salt and pepper to taste

In a large mixing bowl combine chicken, apples, onion, celery, bell pepper, grapes, and pine nuts.

In a separate smaller bowl combine the mayonnaise, mustard, oregano, and rosemary. Add this dressing to the chicken mixture and toss well.

Add salt and pepper to taste.

Chill for about 2 hours before serving on a bed of mixed greens.
