Utah Kids Baking Competitor Shares His Recipe for Cannoli Cupcakes

Utah’s own Henry Muranaka was one of just twelve kids chosen to compete in the latest season of Kids Baking Championship on the Food Network.

Henry joined us in the Studio 5 kitchen, sharing the recipe for Orange Cannoli Cupcakes.

 

Orange Cupcakes with Cannoli-Cream Frosting

Cupcakes

INGREDIENTS

  • 1 stick (4 ounces) unsalted butter, at room temperature
  • 3 cups all-purpose flour, plus more for the pans
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 cups granulated sugar
  • 1/2 cup vegetable oil
  • 4 large eggs, at room temperature
  • Zest of one orange
  • 1 tsp vanilla extract
  • ½ tsp orange extract
  • 1 cup milk

METHOD

  1. Preheat the oven to 350 degrees F. Line cupcake tins
  2. Whisk together the flour, baking powder and salt in a medium bowl; set aside.
  3. Beat the butter, granulated sugar and oil in stand mixer fitted with a paddle attachment on medium-high speed until light in color and fluffy, about 5 minutes.
  4. Beat in the eggs, 1 at a time, then beat in the zest, vanilla and orange until combined.
  5. Alternate folding the flour mixture and milk into the batter with a spatula, adding the flour in 3 additions and the milk in 2, starting and ending with the flour, until just smooth.
  6. Divide the batter evenly between the prepared pans.
  7. Bake the cupcakes on the same oven rack, rotating the pans about halfway if they seem to be browning unevenly, until golden on top and the centers spring back to the touch, 15 to 20 minutes.
  8. Let cool in the pans about 10 minutes, then turn out onto cooling racks and let cool completely.

Cannoli Cream Frosting

INGREDIENTS

  • 1/2 cup Ricotta Cheese
  • 1- 8 ounce pkgs. Cream Cheese, softened
  • 4 cups Powdered Sugar
  • 2 teaspoons Fresh Orange Juice
  • Candied Orange Peel and Mini Chocolate Chips for Garnish

METHOD

  1. In large bowl, cream together ricotta cheese and cream cheese for 4-5 minutes until light and fluffy, scraping sides of bowl often.
  2. Add powdered sugar and lemon juice and cream together.
  3. Spread on top of cooled cupcakes and sprinkle orange peel and mini chips on top.
