3 Roma Tomatoes
1 Red or Yellow Bell Peppers
1 bunch Scallions
1/2 bunch Spinach
Whole Wheat Tortillas
2 c. shredded montery jack cheese
1. Chop the vegetables and drizzle with the olive oil, vinegar and lime juice – as much or as little as you would like, depending upon your taste.
2. Marinate for 30 minutes or longer.
3. Fill tortillas with vegie mixture and top with grated cheese.
4. Grill in cast iron pan or on griddle.
