Watermelon, Prosciutto & Herb Salad

Watermelon, Prosciutto & Herb Salad with a strawberry-lemon balsamic dressing
6 cups mixed baby greens
2 cups cubed watermelon
1/4 cup crumbled feta cheese
2 oz prosciutto, torn or sliced into 1″ pieces
1/4 cup toasted pine nuts
1/2 cup finely sliced fresh basil
1/2 cup finely sliced fresh mint

Dressing:
1/2 cup strawberry jam (freezer is best for freshest flavor)
2/3 cup aged balsamic vinegar
1/4 t. garlic powder
1/2 cup extra virgin olive oil
zest of 1 lemon (about 1-1 1/2 t.)
pinch of salt and pepper


Assemble greens on the plates. Top each with 1 cup watermelon, 2 T., feta, 1 oz Prosciutto, 2 T. pine nuts, and herbs.
Whisk together all dressing ingredients and serve immediately. You should have some extra dressing for later. This is also great with strawberries or raspberries!
