Wheat Grass Smoothie
1 handful of wheat grass
1/3 cup orange juice concentrate
1/3 cup frozen berries
1 handful of fresh spinach
2 cups soy milk
½ cup plain or vanilla yogurt
In a blender, combine the above ingredients.
Black Bean Fudge
1 can black beans, rinsed and drained
5 cups powdered sugar
¾ cups cocoa powder
¾ cups melted butter
1 tbsp. vanilla
In a food processor, blend the above ingredients until smooth.
With a mini scoop, spoon fudge into mini paper muffin cups and refrigerate until ready to serve.
2 cups powdered milk
2 cups all purpose flour
2 cups powdered butter
1 tsp. salt
To make a basic white sauce mix, combine the above ingredients and store in an airtight container.
When you’re ready to cook the sauce, simply take 1 cup water and 1/3 cup of this white sauce mix, and add 1 tbsp. of onion soup mix along with 1 tsp. dried parsely, ¼ cup creamcheese, and ¼ cup parmesan cheese. Cook over medium heat until thick and bubbly, adding more water if needed. Pour over cooked pasta and top with grilled chicken and a sprinkling of fresh parsley. Enjoy!
Multi Grain Crackers
1/3 cup sweet brown rice
1/3 cup quinoa
1/3 cup kamut
1/3 cup oat groats
In a mixing bowl with a kneading hook, combine this flour, along with :
½ cup all purpose flour
1 cup buttermilk
1 tsp. salt
½ tsp. baking soda
In a grain mill, grind the above ingredients into flour.
Knead 6 minutes, and divide into 4 balls. Roll out each ball very thinly on an inverted cookie sheet, and sprinkle with your favorite seasoning or with dehydrated cheddar cheese powder. Bake in a preheated 275 degree oven until lightly brown and crispy!
Dehydrated Tomato and Zucchini Chips
Begin by choosing firm tomatoes or zucchini. Slice them on a mandolin or with a sharp knife. Then lightly spray your dehydrating trays, and lay the vegetable slices in a single layer on the trays. Sprinkle with lemon pepper, and allow to dry 5-6 hours until completely dry. Carefully remove them from the trays, and store them in a glass jar.
These are delicious with a yogurt dip and are the perfect alternative to greasy potato chips!
