Wilma’s Potato Salad

11 medium potatoes
½ cup mustard
½ cup sweet gherkin pickles juice
1 1/4 to 1 ½ cups salad dressing (Miracle Whip)
1 cup chopped sweet gherkin pickles
1 cup chopped Vidalia Onion
6 eggs (4 eggs chopped for salad and 2 eggs sliced for looks on top of salad)

Peel and cut potatoes into cubes and place in large mixing bowl with water, then re-rinse potatoes after cutting. Place potatoes in large pan to boil and add 1 ½ tablespoon of salt. Let potatoes boil. DO NOT OVERCOOK! Potatoes should still be firm but cooked. Drain potatoes. Put all potatoes in large mixing bowl and make lumpy mashed potatoes with mixer. Add all ingredients except eggs and make sure there is a good consistency. Add salt and pepper to taste, then add 4 chopped boiled eggs and stir in well. Make it look pretty, then add 2 sliced boiled eggs on top and sprinkle with Paprika. Place salad in fridge to cool or eat it warm!
