Zucchini-Coconut Bars


¾ cup butter or margarine
½ cup granulated sugar
½ cup brown sugar
2 eggs
1 teaspoon vanilla extract
½ teaspoon salt
1 ½ teaspoons baking powder
1 ¾ cup all-purpose flour
¾ cup flaked coconut
¾ cup raisins
¾ cup dates, pitted and chopped (opt.)
2 cups grated zucchini

Cream together the butter or margarine, granulated sugar, and brown sugar. Add the eggs and vanilla. Mix well. Sift together the salt, baking powder, and flour and add to the creamed mixture. Stir in the coconut, raisins, dates, and zucchini. Spread batter in a greased 9×13-inch baking pan. Bake at 350 degrees for 35 minutes or until a toothpick inserted comes out clean. Remove from oven and make icing.
Icing:
1 cup powdered sugar
1 tablespoon melted butter or margarine
2 tablespoons milk
1 teaspoon vanilla extract
¼ teaspoon ground cinnamon
1 cup chopped walnuts (opt.)

Combine the powdered sugar, melted butter or margarine, milk, vanilla, and cinnamon and mix well. Drizzle over the bars while still warm and sprinkle with the chopped nuts if desired. Let cool. Makes approximately 2 dozen bars.
