After School Snacks

Serve up some after-school snacks and let your kids dish out the details of their day.



Aimee Krey shares three yummy recipes perfect for kids growing minds.
No Bake Monster Energy Bites
½ cup creamy Peanut Butter
⅓ cup honey
1 teaspoon vanilla extract
1 cup old fashioned oats
⅓ cup ground flaxseed
1 Tablespoon chia seeds
¼ cup mini M&M’s


Mix all ingredients together in a large bowl. Refrigerate for 15-30 minutes then roll into balls. Keep energy bites stored in an air tight container in the fridge or freezer.
Turkey Club Quesadillas
4 flour tortillas
8 slices deli-sliced turkey breast
8 slices cheddar cheese, any sliced cheese will work
8 strips of bacon, cooked
sandwich toppings (mayonnaise, tomato, lettuce, etc.)

Spread mayonnaise on each of the tortillas (if using mayo). Layer the turkey, cheese, bacon, and other toppings on half of each tortilla, fold the tortilla over and press down when you are finished putting toppings on it.



Heat a skillet over medium heat. Lightly brush melted butter (or olive oil) on both sides of the tortilla. Cook two filled tortillas at a time (3-4 minutes each; until they are golden brown), turning over once.
Fruit Pizza Crackers
Ritz Crackers
Strawberry Cream Cheese
Fresh fruit and berries


Spread cream cheese on crackers and top with fresh fruit.



This one is simple enough, even the preschoolers can make it on their own! Just a fun after school snack idea.
