Chopped Junior Winner Jack Pollock shares his recipe for Carne Asada Tacos.
Carne Asada Tacos
2 lbs trimmed skirt steak
1 cup olive oil
4 cloves garlic
1 fresh jalapeno
2 tablespoons white vinegar
1/2 teaspoon kosher salt
1/4 teaspoon fresh ground pepper
6 fresh cilantro leaves
Juice of 2 limes or True Lime
crystallized lime equivalent
Juice of 1 orange or True Orange
crystallized orange equivalent
1) Combine marinade ingredients in blender or immersion blender.
2) Place trimmed steak in baking dish and pour blended marinade over the steak. Cover and refrigerate for 2-8 hours.
3) Grill steak and cut into thin strips.
4) Serve in cheese shells, warmed tortillas, or taco shells. Top with tomatillo dressing, shredded lettuce and fresh Pico de Gallo. Pair with lime cilantro rice.
