Alaskan Wild Salmon with Citrus Butter


2 six ounce fresh Alaskan salmon filets
salt and pepper to taste
1 tablespoon extra virgin olive oil

4 ounces unsalted butter, softened
1 tablespoon fresh parsley, chopped
juice of one lemon
1tablespoon lime zest
juice of 1/2 lime
juice of 1/2 orange
pinch of black pepper


Combine all ingredients except salmon, salt, pepper and olive oil. Place butter mixture in a large piece of waxed paper and roll into a cylinder shape. Place in refrigerator to harden.

Season salmon with salt and pepper to taste. Place on barbecue grill over medium-high heat and cook for 3 minutes per side. Remove filets from grill and brush with olive oil.

Remove butter from refrigerator and cut 4 slices, placing two slice on top of each filet. Serve immediately. Serves two.
