Apple Pie In A Jar
7 cups tart baking apples, peeled, cored, thinly sliced
2 tablespoons lemon juice
1 cup sugar
4 tablespoons flour
1 teaspoon cinnamon
1/4 teaspoon nutmeg
2 9-inch, unbaked double pie crusts
8 half-pint canning jars or 8 oz custard cups

Peel, core and thinly slice apples; toss with lemon juice. Mix together sugar, flour,
cinnamon and nutmeg; sprinkle over apples and toss to coat. Set aside.

Place unbaked pie crusts on lightly floured surface. Using the lid from canning jars as a
guide cut 8 circles from pie crust (save scrapes for tops of jars). Roll each circle to slightly
thin pie crust. Press each circle into the bottom and sides of each jar so inside of jar is
completely covered. Evenly divide pie filling among jars, filling jars 2/3 full. Top each jar
with one of the following:

Lattice top – press pie crust scrapes together into a ball and roll out on a lightly floured
surface. Cut thin strips of pie crust (approximately 1/2-3/4 inch wide by 3 ½-4 inches
long). Place 3 strips horizontally across top of jar and 3 strips vertically across jar; weave
strips together and press edges over the rim of the jar. Brush with beaten egg and sprinkle
with sugar. (may wish to use additional pie crust)

Capped Crust- press pie crust scrapes together into a ball then roll out on a
lightly floured surface. Use jar lid as a guide cut circles of pie crust. Place circles of pie
dough on each jar and gently press edges down inside rim of jar; cut 2-4 vent holes in top.
Brush with beaten egg and sprinkle with sugar if desired.

Crumb Topping – mix together until crumbly 1/4-cup brown sugar, 1/4-cup
flour, 1/4-teaspoon cinnamon, 2-tablespoons uncooked rolled oats and 3-tablespoons
softened butter. Sprinkle on top of jars.

Place jars on a baking sheet in cold oven, set oven temperature to 375 degrees
and bake for 45-60 minutes or until tops are golden brown and filling bubbly. Serve warm
or cold with a slice of cheddar cheese.

Blonde Apple Pie Brownies
1 cup butter, softened
1 3/4 cup sugar
2 eggs, beaten
1 teaspoon vanilla
4 cups apples, peeled, cored, finely chopped
3/4 cup chopped nuts
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Powder sugar

Preheat oven to 350 degrees. Butter a 9×13 baking pan and set aside.
Beat together butter and sugar and creamy; stir in beaten eggs and vanilla; set aside.
Peel, core and chop apples, set aside.

Stir together nuts, flour, baking soda, baking powder, salt, cinnamon and nutmeg; stir in
apples. Fold apple mixture into butter and sugar mixture. Spread in prepared pan. Bake
40-45 minutes or until done. Allow brownies to cool before cutting. Sprinkle with powder
sugar. Serve warm or cold with a cold glass of milk.

Notes:

Brownies are a thick chewy cake like cookie, typically made with chocolate. This delightful
twist is light in color but full on flavor. A great apple lovers dessert. Serves 8-12
Apple Pizza
1/2-3/4 loaf frozen bread dough, thawed
8 ounces cream cheese, softened
1 egg
1 teaspoon vanilla
3/4 cup granulated sugar, divided
4 cups peeled, cored, chopped apples
9 tablespoons flour, divided (little more than 1/2-cup)
1 teaspoon ground cinnamon
1/4 cup brown sugar
2 tablespoons butter, softened
1/4 cup uncooked rolled oats
1/4 cup almonds, chopped, slivered
Caramel ice cream topping
Ice Cream

Preheat oven to 350 degrees.

Thaw bread dough according to package directions. Roll and pat dough thinly out on a
buttered 14-inch pie pan, leaving 1/2-inch edge around outside. Allow to rest 15 minutes.
Beat together softened cream cheese, egg, vanilla and 3-tablespoons granulated sugar;
spread over bottom of prepared pan.

Stir together 4-tablesppons flour, remaining granulated sugar and cinnamon; toss with
chopped apples and spread over cream cheese (to within 1-inch of pizza crust edge –
filling spreads slightly)

Stir together remaining 5-tablespoons flour, brown sugar, softened butter, rolled oats and
almonds until mixed and crumbly; sprinkle over apples (to within 1/2-inch from edge of
apples). Bake 40-45 minutes or until golden brown and apples are tender. Remove from
oven and allow to cool 20 minutes before slicing. Serve warm or cold. Cut into 8-12
wedges; serve drizzled with caramel topping and a scoop of ice cream.

Notes:

Fun dessert for a pizza party! Pizza is excellent served with cheese slices. Sugar may be
reduced when using sweet apples. Recipe is an adaptation of French Flambe Alsace apple
and cinnamon crepe. Serves 8-12
