Apricot Nut Bread


1 2/3 cups flour
1 1/2 cups sugar
1 teaspoon soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
2 eggs
1 jar (6oz.) strained apricot baby food
1/2 cup oil
1/3 cup water
1 1/2 teaspoons vanilla
1/2 cup nuts, chopped


2. In another bowl, combine eggs, apricots, oil, water and vanilla. Stir into
dry ingredients.

3. Stir in nuts. Pour batter into one 9″x5″x3″ loaf pan or use 4-5 mini loaf
pans.

4. Bake at 350 degrees for 50-60 minutes for large loaf, 40-50 minutes for
smaller loaves. Check with toothpick inserted near the center until it comes
out clean. Cool in pans for 15 minutes before removing to wire rack to cool
completely.
