1 bunch of asparagus, ends trimmed
1/2 to 1 gallon boiling water
1 tablespoon sea salt
1/2 cup bay shrimp
4 tablespoons olive oil
4 tablespoons red wine vinegar
1 tablespoon parsley, fine chopped
1 tablespoon shallots, find chopped
1 egg, hard boiled, egg white ONLY, chopped very fine
1 tablespoon red pepper, fine chopped
1/2 teaspoon cracked black pepper
pinch sea salt
1/2 teaspoon dry basil
juice of 1 lemon
1/2 teaspoon lemon zest
Bring water to a boil and add the tablespoon of sea salt. Drop asparagus in boiling water and cook for one to two minutes. Remove from water and place in an ice bath until chilled.
Combine remaining ingredients, except bay shrimp, and chill. Spread asparagus on a serving plate, top with bay shrimp and coat with dressing. Serve immediately. Serves 4.
