2 cups sugar
1/2 cup water
2 lb. approximately 4 to 5 cups, peeled and coarsely chopped mango (4 to 6 whole ripe
mangos as purchased)
1/3 cup fresh lime juice
2 cups fat free half and half
1/4 – teaspoon vanilla extract
2 tablespoons orange flavored liqueur, Curaco, etc. – optional
pinch salt – optional
1. Stirring constantly, cook sugar and water over high heat in a small saucepan until sugar dissolves and mixture reaches a full boil.
2. Remove pan immediately from heat and cool to room temperature. Strain syrup if necessary and refrigerate at least 30 minutes before blending with fruit and half and half.
3. Puree mangos in blender or large food processor along with sugar syrup and lime juice. Stir in fat free half and half, vanilla extract, liquor if using and salt.
4. Transfer mixture to an ice cream maker and freeze according to manufacturer’s instructions.
Yield: About 2 quarts or 16 – 1/2 cup servings each at approximately 160 calories; 0.2 gram total fat; 0 saturated fat; 0 cholesterol; 39 grams carbohydrate; 1.5 grams dietary fiber; 1 gram protein; 32 milligrams sodium.
Compare at 200 calories and 5.5 grams total fat vs. 160 and 0.2 gram total fat.
