Coffee Cake With Banana Cinnamon Crumb

Banana Cinnamon Crumb Coffee Cake

Ingredients

Crumb:

• 1/2 cup flour
• 2/3 cup sugar
• 2/3 cup brown sugar
• 1/2 cup butter, cut into pieces
• 1 tsp cinnamon

Directions

In a food processor, mix together flour, sugars, and cinnamon, slowly add butter and pulse until well blended. Pour into a bowl, and set aside.

Ingredients

Cake:

• 3 cups flour
• 1 1/4 cup sugar
• 3 tsp baking powder
• 3/4 teaspoon fine sea salt
• 1/2 cup butter, cut into pieces
• 1 1/4 cup milk
• 1/2 cup banana purée, about 2 small bananas
• 1 egg
• 2 tsp vanilla

Directions

Heat oven to 350 degrees.

Butter 13×9 baking dish.

With a food processor, mix flour, sugar, baking powder and salt together. Slowly add butter, and pulse to mix well. Or use a traditional method and cut butter into flour mixture using a pastry blender. Pour into a medium size mixing bowl.

Whisk together, milk, banana, egg, and vanilla. Stir mixture until just blended.

Spread about half of cake batter evenly into the bottom of the prepared baking dish. Sprinkle 1 cup of the crumb evenly over the top. Spoon remaining batter over the top. Take a knife and swirl lightly together. Sprinkle the rest of the crumb over the top. And bake for 30-40 minutes or until cake tester comes out clean.

Dress it up with specialty whipped cream and fresh sliced bananas.

Makes 10-12 servings

Brown Sugar Cinnamon Whipped Cream

Ingredients

• 2 cups heavy cream, chilled
• 6 tbsp brown sugar
• 1/2 tsp cinnamon
• 1 tsp vanilla

Directions

In a medium sized mixing bowl, dissolve brown sugar in cream. Add vanilla, and whipped to soft peaks. Chill until ready to use.
