Barbecued Brisket


2 tablespoons pickling spice
1 tablespoon kosher salt
½ tablespoon fresh ground black pepper
2-3 pound brisket
¼ cup apple cider vinegar
2 tablespoons liquid smoke
1 small yellow onion, cut into 8ths
2 medium carrots, cut into 6ths


Mix together the pickling spice, kosher salt, and black pepper and rub the mixture into the brisket. Place the vinegar and liquid smoke into a ceramic baking pan and add the brisket, onion, and carrots and bake, uncovered, for 4 hours at 300 degrees.

Serve with Brisket Barbecue Sauce.

Brisket Barbecue Sauce
¼ cup distilled white vinegar
¼ cup red wine vinegar
2 tablespoon dried chiles, crushed
1 small Roma tomato, crushed or finely diced
1 clove garlic, crushed
2 tablespoons brown sugar


Combine 1 tablespoon of crushed chiles along with the remaining ingredients and cook over medium high heat until the mixture comes to a boil. Simmer for 5 minutes, remove from heat, and strain. Add the second tablespoon of crushed chiles.
