2 6 ounce halibut filets
salt and pepper to taste
10 zucchini wheels, ½” thick
10 yellow squash wheels, 1/2 “ thick
4 tomato wedges
2 tablespoons olive oil
1 tablespoon fresh basil, chopped
½ teaspoon crushed garlic
pinch of salt
1 tablespoon parsley, chopped
Combine the olive oil, basil, garlic, pinch of salt, and parsley and set aside.
Sprinkle halibut filets with salt and pepper to taste. Pan sear the halibut in a non-stick pan over medium high heat for 5 seconds on each side.
Place halibut and vegetables on a clean, hot barbecue grill and cook for 3 minutes per side, brushing fish and vegetables with oil. Remove and serve with your favorite starch.
