Barbecued Whole Salmon with Grilled Cole Slaw

Barbecued Whole Salmon
1 whole fresh salmon, stuffed with fresh dill, lemon, and onion, seasoned with salt and pepper to taste, and wrapped in chicken wire (or placed in a salmon basket)

Bring barbecue to maximum heat. Place salmon on the grill and cook approximately 10 minutes per inch measured at the thickest part (usually 40-50 minutes total cooking time).

To test for doneness, make a small incision in the thickest part near the backbone. If there is any visible transparency, the fish is not done. The fish will be opaque when fully cooked.
Grilled Cole Slaw
Ingredients:
1 head green cabbage, cored
1/2 cup white vinegar
1/2 cup brown sugar
2 tablespoons olive oil
1 tablespoon cracked black pepper
salt to taste

Cut the head of cabbage into 6 wedges and place on the grill. Cook the cabbage wedges on each of the 3 sides for 3 minutes per side. Remove from grill and shred.

Mix the remaining ingredients together and toss with the shredded cabbage.
