Breakfast Omelet Rolls

A grab and go breakfast roll that’s savory, not sweet.

Breakfast Omelet Rolls
Bread Dough Ingredients: *
1 cup milk
1/3 cup sugar
1 teaspoon salt
2 tablespoons butter, softened
1 whole egg, beaten
1 tablespoon yeast
4+ cups flour
1 egg white
Filling Ingredients:
4 tablespoons savory garlic cooking cream cheese
3 eggs, scrambled
1/3 pound cooked ham or crumbled bacon (or thin sliced ham)
3-4 tablespoons chopped jalapeno peppers
1 cup cooked southern style hash brown potatoes
1 1/2 cup shredded cheddar cheese

Warm milk to lukewarm in microwave; stir in sugar and yeast. Beat in egg, salt, softened butter and half the flour. Stir in additional flour to create soft dough. Knead with electric mixer, adding additional flour as needed to keep dough from sticking to sides of bowl (or knead by hand on a floured surface) until smooth and elastic. Place in a clean bowl sprayed with non-stick spray; cover with plastic wrap and allow dough to raise double in bulk.

While dough is rising prepare filling ingredients as needed.

Knead excess air from dough. Roll dough out into a 20×15 inch rectangle. Spread dough with cream cheese; spread with scrambled eggs, ham, peppers, hash browns and 1 cup shredded cheese
