Broiled Ahi Tuna/Salmon Sandwich with Spicy Slaw
6 (6-oz) pieces center-cut salmon fillet/Ahi tuna steak (about 1 inch thick)
3 Tbl lemon juice; finely grated fresh lemon zest; and 6 lemon wedges
4 cups broccoli slaw
1 Tbl olive oil
2-3 tsp hot chili oil
1-2 Tbl rice vinegar
6 pita halves
Season salmon/tuna with lemon juice and zest, place flesh sides down, on lightly oiled broiler pan. Broil on high 10 minutes for salmon or until cooked through; 5 minutes per side for Ahi tuna (salmon fillets do not need to be turned).
Meanwhile, sauté broccoli slaw in a large skillet with olive oil, hot chili oil and rice vinegar for 3-4 minutes. Season with salt and pepper. Set aside.
When salmon/tuna is done, assemble sandwiches by spooning a generous amount of slaw in to pita pocket, top with fish fillet and serve with lemon wedge.
