Breakfast Burgers

Ingredients
- 6- 1/3 lb. beef hamburger patties, cooked to your liking
- 6- Bagel Thins, Everything Bagel Seasoning
- 1 avocado mashed
- Kosher salt
- 6 strips bacon, cooked
- 6 eggs, sunny side up
- Arugula and spinach mix
- 4 oz. cream cheese
- 1 tsp. tomato paste and 1 tsp. fresh basil paste or tomato pesto
- 1 tbsp. milk
- Bonus: bacon jam
Directions
In a small skillet over medium heat, with a little butter, cook your sunny side up egg, or fried egg to your liking.
Assemble your breakfast burger.
Open your skinny everything bagel, you can toast it if you like. I like my bagels toasted.
Spread ½ the bagel with mashed avocado. Sprinkle with some kosher salt. In a small bowl, combine the soft cream cheese, tomato paste, fresh basil paste, or tomato pesto and milk. Spread the other ½ bagel thin.
Layer your toasted bagels with your burger, bacon, egg, and a small handful of arugula and spinach. Top with the other ½ of toasted bagel. If you really want to be over-the-top, add some bacon jam on top of the cream cheese spread. Serve warm.
Serve with a side of fruit or potato hash.
