Butternut Parmesan Grits with Fresh Basil

If you’re looking for something special to make your chicken dinner
better than the typical dinner, try a side dish that gets its
inspiration
from fancy gourmet restaurants. Grits are making a gourmet
comeback.

Parmesan Grits with Fresh Basil.
Butternut Parmesan Grits with Fresh Basil
1 cup milk
1 cup water + 1/4 cup
1 tbsp butter
1/2 tsp salt
3/4 cup quick cooking grits
3/4 cup butternut squash, cooked, and pureed
1/2 cup fresh grated Parmesan cheese
3-4 fresh basil leaves, snipped

In a medium sized saucepan, bring milk, 1 cup of water, butter, and salt to a boil.
Whisk in grits, add butternut squash and half of the basil. Mix well.
Cook until mixture thickens. About 5 minutes.
Remove from heat and stir in cheese.
Stir in additional 1/4 cup of water.
Serve hot.
Garnish with remaining fresh basil.

An excellent compliment to roasted chicken.
