Dressings for Fresh Fruits

Fresh fruit is a great side dish for a casserole. It’s one thing you know
won’t be in any casserole, and the colorful fruit will add a splash of
color to your plate. But don’t just serve it plain, add a little homemade
dressing.
Food Blogger, Laura Powell, who blogs at Real Mom Kitchen, shares
three of her favorite recipes.
Strawberry Balsamic Dressing
1/3 cup frozen strawberry daiquiri concentrate, thawed
2 Tbsp water
1 Tbsp balsamic vinegar


In a bowl, combine all of the above ingredients until well blended. Toss desired fruit with
dressing and refrigerate for 1 hour.

I like this dressing with an assortment of berries with some fresh basil. Peaches and melon
also work well.

Quick Honey-Lime Fruit Dressing
½ cup bottle coleslaw dressing
3 Tbsp. honey
Zest of half a lime
1 ½ tsp lime juice


In a bowl, combine all of the above ingredients until well blended. Just before serving, add
to fruit and gently toss.
This one works well with melons, pineapple, and grapes

Poppy Seed Dressing
1/3 cup vinegar
1 tsp salt
¾ cup sugar
1 tsp mustard
1 green onion (remove the root end along the green top – save green tops for another use)
½ cup canola oil
1 tsp poppy seeds

In a blender, add the vinegar, salt, sugar and mustard. Process until combined.
Add the green onion and process until well blended.
Add oil in steady stream while running .
Stir in poppy seeds and serve immediately over fruit.
Fruits that work well with this are berries, melons, pineapple, and bananas.
