Green Bean Bundles & Tomato Salad

Deciding on a pasta dish for dinner is only half the battle. Now what is
the perfect “side dish” for it? Look past the traditional French bread
and pick something that will complement your dish.

dishes, Green Bean Bundles and Heirloom Tomato Salad.
Green Bean Bundles
1 lb. fresh green beans
Olive Oil
S&P
1 Clove Garlic, chopped finely
6-8 Slices of Center Cut Bacon

1. Preheat oven to 350.

2. Blanch green beans for 3-5 minutes, depending on desired crispness. Toss
them in olive oil

3. Separate green beans into desired serving size. Wrap each individual
bundle of beans with a piece of bacon and secure with a toothpick. (You can place the
bacon in the microwave for a minute or two before wrapping to speed up cooking time.)

4. Sprinkle with chopped fresh garlic and salt and pepper.

5. Place on cooling rack placed in baking sheet and roast for about 10-15
minutes or until bacon is cooked.
Heirloom Tomato Salad
Heirloom cherry tomatoes (multi-colored, if possible), halved
Queso Fresco cheese, crumbled
Cilantro, finely chopped
Fresh Lime juice
Olive Oil
Coarse salt and freshly ground pepper

Cut in half the number of tomatoes desired. Garnish with other ingredients to your desired
taste. Chill and serve.
