Caputo’s Alfrdo Sauce


1 1/2 sticks (3/4 cup) unsalted European butter, preferably Plugra brand.
1 1/2 cups heavy or whipping cream
1 3/4 cups grated Parmgiano Reggiano or Grana Padano
freshly ground black pepper, to taste

Place butter in skillet and melt over medium heat, add crea, stirring often untik
mixture is simmering. Add cheese and stir until melted. Toss over cooked pasta,
preferably fettucine, grind pepper over each dish.
