Caputo’s Black-Eyed Peas

1/4 lb bacon, diced
1 lb. andouille sausage, cut into 1/4 inch slices
1/2 lb. ham, diced
1 cup onion, chopped
1/2 cup green bell pepper, chopped
1 cauemme pr jalapeno pepper, chopped
1-15 oz. can black-eyed peas
salt and pepper to taste
plenty of hot sauce for those that can take it

In a heavy saucepan, brown the bacon. Add the sausage and ham and brown. Add
the onion, bell pepper and jalapeno, cook until the pepper begins to soften, about 5
minutes. Season with salt and pepper, pour in the can of black-eyed peas and
simmer over low heat for about 30 minutes. Serve over rice with plenty of hot sauce.
