Dipping Sauce
6 T soy sauce
6 T hoisin sauce
4 t honey
2 T Chinese chili sauce
2 t garlic, minced
Marinade
3 T soy sauce
3 T sesame oil
3 T hoisin sauce
3 T Mirin or dry sherry
1 T garlic, minced
1 T fresh ginger, peeled and minced
1 shallot, finely chopped
1/2 t salt
6 pork chops
2 T honey
2 T sesame oil
Prepare thme dipping sauce by combining all the ingredients in a bowl and mixing well; divide into 6 small serving bowls and set aside.
Combine the marinade ingredients in a large bowl. Add the pork chops and toss to coat evenly. Let marinate at room temperature for at least 2 hours, turning several times.
Combine the honey and sesame oil in a small bowl. Heat a large non-stick skillet over medium heat. Brown the chops lightly, about 5 minutes per side, basting with the honey mixture. Reduce the heat to medium-low, cover and cook, turning the chops after about 8 minutes, until the chops are cooked through, about 15 minutes. Serve each chop with a little bowl of dipping sauce.
