Caputo’s Pear & Pork Rolls


1 1/2 pork loin, sliced into 1/2 inch thick pieces
2 pears, cored and sliced into eighths
8 slices Swiss or gruyere cheese
2 sprigs fresh thyme, leaves only
1 cup flour
salt and freshly ground pepper to taste
1/4 cup extra virgin olive oil


Pound the pork slices with a meat mallet until uniformly thick and about the size of your hand. Place two slices of pear on each piece of pork, then 1 slice of cheese and a few thyme leaves, don’t over-do the thyme. Roll up and secure with a toothpick. Combine the flour and salt and pepper. Roll the pork bundles in the flour to coat, shaking off excess flour. Heat the olive oil in a large skillet over medium heat. Place the pork bundles in the skillet and cook until done, turning frequently to brown all over. Place the bundles on a serving platter. Reduce the pan juices and drizzle over the pork bundles. Serve immediately.
