2-3 cups cooked corned beef (about 1 pound cooked)
2 teaspoons caraway seeds, optional
1 cup cheese, shredded
1-2 tablespoons dry onion, or 1/2 cup chopped fresh onion
1/2 cup biscuit mix
1 cup milk
fresh parsley, to garnish
Shred or finely chop cooked corned beef. Place in oiled 9-inch pie plate. Sprinkle with caraway seeds, if desired. Cover with shredded cheese.
Combine onion, biscuit mix, milk, and eggs. Beat well. Pour mix over meat and cheese. Bake in a preheated 4000 F oven for 30 minutes or until golden brown and cooked through.
Garnish with sprigs of fresh parsley, serve with a dollop of horseradish.
