Caputo’s Prosciutto and Gorgonzola Rolls

1 cup Gorgonzola cheese
4 oz. soft goat cheese
1/2 cup heavy cream
8 walnuts, shelled and chopped
8 chives, chopped
8 chives, blanched
freshly ground black pepper
8 large slices prosciutto, or regular ham
3 basil leaves, julienned

In a bowl, combine the Gorgonzola, goat cheese, heavy cream, walnuts and chopped chives, season lightly with the pepper. Place a spoonful of the mixture on one end of each piece or prosciutto, roll them up. Tie each bundle in the center with a blanched chive. Place on a platter and microwave for about 10 seconds, or until the cheese melts. Sprinkle with the basil and serve warm.
