4 cloves garlic, chopped
6 T fennel seed
salt and freshly ground black pepper
4 games hens, washed and patted dry
1/2 extra virgin olive oil
Preheat oven to 350 degrees. In a small bowl combine the garlic, fennel, salt and pepper to taste. With a fingertip and starting at the breast, gently loosen the skin from the game hens, being careful not to tear the skin. Using your fingers, gently spread the garlic mixture evenly between the meat and the skin of the game hen breasts, backs and legs.
Rub the hens with the olivo oil and sparingly season with additional salt and pepper. Pour the remaining olive oil in a roasting pan and roast the hens for 45 to 60 minutes, basting frequently with the pan juices until done. When the skin is dark and crisp remove from the oven, arrange on a platter and serve.
