Caribbean Griddle Biscuits


2 cups all purpose flour
2 teaspoons baking powder
¼ teaspoon salt
½ cup water
2 tablespoons acceptable vegetable oil (corn oil, sunflower oil, or canola oil)
2 teaspoons sugar
Vegetable oil spray


In a medium mixing bowl, combine the flour, baking powder, and salt. In a small mixing bowl, combine the water, vegetable oil, and sugar. Pour this mixture into the flour mixture and mix with a spoon until just combined. Add water, small amounts at a time as needed, if mixture is too dry.

Roll out dough on a lightly floured cutting board or waxed paper to ¼ inch thickness. (If using a small board, roll out half the dough at a time.) Using a 2-1/2 inch biscuit or cookie cutter, cut dough into circles. Bring together scraps of dough, roll out again, and cut more circles. Do not over handle the dough. Repeat until all dough is used.

Lightly spray a nonstick griddle with vegetable oil spray and preheat over medium heat. Cook the biscuits on one side for 3 minutes, or until golden brown, then cook on the other side for 3 minutes. Remove from griddle and serve warm.

Bakes will keep in an airtight container in the refrigerator for up to 4 days and in the freezer for up to 2 months. To re-crisp the bakes, place them uncovered in a preheated 375 F oven for 5 to 10 minutes.
