1 T. Roma tomatoes
1 T. Red onion
1 T. Cucumber
1 T. Cilantro
Peel and coarse chop 10 medium size shrimp; put in bowl
Cut 5 small limes and squeeze on the shrimp, make sure all the shrimp is coated with lime juice, add salt and pepper. Set shrimp
Aside for 30-60 minutes.
Finely chop 1 heaping tablespoon of roma tomato, cucumber, red onion and cilantro. Add this to the shrimp and mix well.
Place shrimp mixture on top of one tostada and add slices of avocado to the top of the tostada. Serve with an additional tostada to scoop up the Ceviche. The
Ceviche tostada can be accompanied with a variety of Mexican hot sauces such as, Guacamaya, Huchol or Valentina.
