It’s a shrimp quesadilla… created with artificial intelligence. Chat GPT created it, and Studio 5 producer Harlee Frodsham made it!

We’re rolling out the Chat GPT dinner challenge to the Studio 5 producers. Using ingredients they have on hand, they’ll ask AI to create a recipe for dinner. It could be revolutionary for the home cook, and a new way to invite a little technology help into your meal planning.

Shrimp Quesadillas

Ingredients

For the shrimp:

  • 1 lb (450g) large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Juice of 1 lime

For the quesadilla:

  • 4 large flour tortillas
  • 1 cup shredded Monterey Jack or Mexican blend cheese
  • 1 cup cooked black beans (canned or cooked from dry)
  • 1 ripe avocado, sliced
  • 1 cup bell peppers, thinly sliced (use a mix of colors for visual appeal)
  • 1/2 cup red onion, thinly sliced
  • Fresh cilantro, chopped (for garnish)
  • Sour cream or Greek yogurt (for serving)

Instructions:

  1. In a bowl, mix together the olive oil, minced garlic, chili powder, cumin, paprika, salt, pepper, and lime juice to create a marinade.
  2. Add the shrimp to the marinade, ensuring they are well coated. Allow them to marinate for about 15-20 minutes.
  3. Heat a skillet or pan over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes per side or until they turn pink and opaque. Remove from heat and set aside.
  4. In the same skillet, place a tortilla. Sprinkle a portion of shredded cheese over half of the tortilla.
  5. Add a layer of cooked black beans, sliced avocado, bell peppers, red onion, and the cooked shrimp on top of the cheese.
  6. Fold the tortilla over the filling, creating a half-moon shape. Press down gently with a spatula.
  7. Cook the quesadilla for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
  8. Repeat the process for the remaining tortillas and filling.
  9. Once cooked, remove the quesadillas from the skillet and let them rest for a minute before slicing into wedges.
  10. Garnish with fresh cilantro and serve with sour cream or Greek yogurt on the side.
