Every day this week, we’ve pulled in a producer to put AI’s culinary skills to the test. Studio 5 Producer Mindy Dunyon accepted the Chat GPT dinner challenge! She adds her recipe creation to our series.
Mindy liked dipping these quinoa bites in Sweet Chili sauce. She found that using Chat GPT as her recipe creator made it easy for her to adapt the recipe to her family’s own unique allergy restrictions.
Broccoli Quinoa Bites with Onion and Bread Crumbs
- 1 cup of cooked quinoa
- 1 cup finely chopped broccoli
- ½ cup diced onions
- ½ cup bread crumbs
- 2 eggs
- ½ cup shredded cheese (optional)
- Salt and pepper to taste
- Olive Oil for cooking
- Preheat your oven to 375 degrees.
- In a large bowl combine cooked quinoa., Chopped broccoli, Diced onions, Bread crumbs, Beaten eggs. Shredded cheese (if using), Salt and pepper. Mix well until the ingredients are evenly distributed.
- Form the mixture into small bite-sized patties or balls.
- Heat olive oil in a skillet over medium heat.
- Cook the quinoa bites in the skillet until they are golden brown on each side.
- Transfer the cooked bites to a baking sheet lined with parchment paper.
- Bake in the preheated oven for about 15 to 20 minutes, or until the bites are cooked through and crispy.
Serve the broccoli quinoa bites with your favorite dipping sauce or enjoy them as they are!
